What this is
Pediocin PA-1 is a 44-amino-acid class IIa bacteriocin made by Pediococcus acidilactici. Unlike the broad-spectrum bacteriocin nisin, it targets specific foodborne pathogens — in particular Listeria monocytogenes, against which it is highly effective in susceptibility studies.
Why it is worth looking at
Industrial preservative production has historically needed massive continuous-flow fermentation. Pediocin PA-1 can instead be made by batch submerged fermentation in low-CapEx equipment.
